Beyond the Plate: the Future of Enogastronomy

On January 26, 2026, Ca' Foscari University of Venice will host a significant event for the food and wine sector: the workshop "Beyond the Plate: The Future of Enogastronomy". Organized by the Agrifood Management and Innovation Lab of the Venice School of Management, the meeting will take place at the San Giobbe Economics Campus from 10:00 AM to 4:00 PM.

The workshop is designed for catering professionals, chefs, tourist guides, and industry experts who wish to understand the new consumer trends driving food and wine choices. The day is divided into two main sessions:

  • Morning (10:00 AM – 12:30 PM): An in-depth session dedicated to the evolution of consumer tastes and the role of enogastronomy in enhancing local territories and their products.
  • Afternoon (1:30 PM – 4:00 PM): An operational phase where participants will apply the knowledge gained through collaborative exercises and networking activities.

The event will feature international experts:

  • Adela Balderas Cejudo: Associate Professor at MIT City Science and Harvard RCC, Professor at the Basque Culinary Center, and lecturer at Deusto Business School.
  • Davide Boschiggia: Consultant and project design expert, who will lead the afternoon application session using specific methodologies.

Participation in the workshop is free of charge, but mandatory registration is required via the Eventbrite platform. The ultimate goal is to provide professionals with concrete tools to rethink their positioning and integrate sustainable practices into their businesses.
