Visit of the 9th Monitoring Committee to AZRRI – Lead Partner of the TESTEAT Project
As part of the 9th Monitoring Committee Study Visit, held on October 22, representatives of the committee visited AZRRI – Agency for Rural Development of Istria, the lead partner of the TESTEAT project.
During the visit, Head of Department – Centre for Education, European and Institutional Cooperation, Jasenka Kapuralin, presented the TESTEAT project, its key activities, objectives, and achieved results, with a particular focus on AZRRI’s role in connecting gastronomy, education, and sustainable rural development. The presentation highlighted how AZRRI’s long-term work contributes to the valorisation of local resources, the preservation of traditional breeds and products, and the transfer of knowledge through professional training and educational programs for chefs, farmers, and tourism professionals.
The highlight of the visit was a culinary show by Chef David Skoko, who creatively showcased local breeds and traditional Istrian recipes prepared in a modern and innovative way. The specially designed menu reflected the project’s approach, adapting traditional dishes to various dietary preferences such as vegetarian and other specific dietary profiles highlighting how traditional cuisine can be inclusive and innovative.
Through projects like TESTEAT, AZRRI continues to strengthen the link between education, gastronomy, and local development, promoting Istrian heritage as a foundation for innovation and sustainability in the food and hospitality sectors.
