On 28 October 2026, the Croatian Sausage House in Saint Peter in the Forest hosted the first of three planned workshops organised as part of the AltRoute – Alternative Tourism Paths project. The workshop brought together pupils from the local primary school, offering them a hands-on opportunity to discover the traditional preparation of one of Istria’s most beloved pastries – Istrian kroštule.
The workshop was organised by the Municipality of Saint Peter in the Forest and led by Elena Zgrablić (Mića Kužina), who introduced the participants to traditional ingredients, preparation techniques and the importance of preserving local gastronomic heritage.
The young participants showed exceptional interest, curiosity and enthusiasm throughout the workshop. They eagerly followed the demonstration, asked questions and actively participated in rolling, cutting and shaping their own kroštule, demonstrating creativity and impressive practical skills.
Special attention was given to zero-waste principles, encouraging responsible use of ingredients, reducing food waste and promoting sustainable practices in traditional food preparation.
Following the practical session, pupils enjoyed a tasting of freshly prepared kroštule and traditional Istrian cured meat products, accompanied by a discussion about local gastronomy, cultural heritage and sustainability. The workshop concluded with participants sharing their impressions and completing a short satisfaction questionnaire.
At the end of the workshop, each pupil received a small gift package containing freshly prepared kroštule and a traditional recipe to take home, encouraging them to share their newly acquired knowledge and continue the tradition with their families.
Preserving traditional knowledge and passing it on to younger generations is one of the key objectives of the AltRoute project. Through activities like this, the project promotes local gastronomic heritage, encourages intergenerational learning and contributes to the development of authentic and sustainable tourism experiences.
This was the first of three thematic workshops planned in Saint Peter in the Forest, focusing on traditional skills, local gastronomy and sustainable approaches.
