As part of the GUSTI project, Lika-Senj County is organizing culinary workshops dedicated to sustainable nutrition and local gastronomy. These will take place on September 9 and 10, 2026, from 10:00 to 13:00 at the Lika-Senj County Development Center (Razvojni centar Ličko-senjske županije), located at Pazariška 36, Gospić.
The workshops will be led by Chef Endrina Muqaj, winner of the previous season of MasterChef. Through both theoretical and practical sessions, participants will have the opportunity to learn about the principles of sustainable gastronomy and their application in food preparation.
Theoretical Workshop Session – September 9 2026
The first day of the workshop will focus on sustainable nutrition and gastronomic practices, with a special emphasis on utilizing local resources and preserving the values of traditional gastronomy.
Participants will explore the following topics:
- sustainable nutrition and sustainable gastronomic practices
- the importance of local and seasonal ingredients
- reducing food waste
- the nutritional value of traditional dishes
- opportunities for developing sustainable gastro-tourism.
The goal of the theoretical session is to show participants how everyday food choices, traditional dishes, and local production can contribute to the sustainable gastronomic and tourism development of the destination.
Practical Workshop Session – September 10 2026
On the second day, the knowledge gained will be put into practice. Under the guidance of Chef Endrina Muqaj, participants will prepare a selected recipe, learn about the various stages of its creation, and take part in the culinary process together. The workshop will end with a tasting of the prepared dish, giving participants the opportunity to connect the topics of sustainable nutrition, local ingredients and gastronomy through practical experience.
