Due ruote e una forchetta: : Slow travel towards a GUSTI-ful, healthy and truly sustainable tourism (for real!)
On 27 March 2026, from 14:00 to 15:00, on the occasion of the Cycle Tourism Fair, the workshop “Two wheels and a fork: Slow travel towards a GUSTI-ful, healthy and truly sustainable tourism (for real!)” will take place, offering a moment of exchange dedicated to the value of cycle tourism and slow tourism as strategic levers for truly sustainable territorial development.
The initiative is part of the activities of the European project GUSTI - Gastro UpScaled Tourist Itinerary in rural regions of Croatia and Italy, co-funded by the Interreg Italy–Croatia Programme, which promotes the enhancement of rural areas through integrated tourist itineraries capable of connecting soft mobility, landscape and local food and wine excellence.
This workshop also builds on the work started by CESCOT in December with the workshop “Con gli occhi del turista - Cambiare prospettiva per rafforzare l’offerta turistica del territorio Euganeo”, as a natural second step: from reflecting on how the territory is perceived by visitors to discussing how routes, services and local products can be connected into more coherent and attractive tourism experiences.
The workshop “Due ruote e una forchetta” aims to turn the “itinerary mindset” into practical choices that make cycle tourism and slow travel work on the ground. It focuses on what comes first (routes that feel safe and continuous), what needs to be measurable (so sustainability is more than a label), how a route becomes a combined product (services, coordination, communication), and what turns a ride into a memorable experience (welcome, landscape culture, and local food and wine as part of the journey).
The workshop will take place on 27 March, a day dedicated to B2B, and will offer a space for dialogue among stakeholders, operators and sector professionals to reflect on how cycle tourism can generate new opportunities for territories, strengthening the local economy, promoting more responsible forms of tourism and contributing to the creation of authentic, high-quality tourism experiences.

Particular attention will be dedicated to the relationship between cycling routes, rural heritage and food culture, highlighting how these elements, if connected coherently, can become a driver for the competitiveness and sustainability of destinations.
The event is open, but with limited seats.
During the fair, moreover, CESCOT Veneto will be present with a dedicated desk in Pavilion 4, where it will be possible to learn more about the GUSTI project and its activities.
