Guided Oyster Tasting at the CROFISH Fair

As part of the CROFISH Fair, the MARINET project organised a guided oyster tasting on Sunday, 23 November 2025, with two sessions at 10:00 and 12:00 (duration: 45 minutes), held in the Žatika Hall. Participants had the opportunity to taste two Adriatic flat oysters originating from two Croatian sites—Budava and Lim—where the project is testing new production methods and monitoring oyster growth. During the session, attendees also learned how to assess oyster quality and key sensory characteristics.
The activity was organised by MARINET partners Fakultet za menadžment u turizmu i ugostiteljstvu Sveučilišta u Rijeci and Obrtnička komora Istarske županije, with support from collaborators Istrida d.o.o. and Cromaris Hrvatska.
The tasting, which involved 100 participants, was led by Dr. Nada Vahčić, retired professor at the Faculty of Food Technology and Biotechnology, University of Zagreb. She provided scientific insight while guiding participants through the principal sensory attributes that define oyster quality.
All tastings followed an ad hoc protocol developed by the Fakultet za menadžment u turizmu i ugostiteljstvu Sveučilišta u Rijeci, which is also leading the project activities related to the nutritional quality and safety of aquaculture products, the benefits of their consumption, consumer perceptions of aquaculture products, and the marketing campaign Good Aquafood.
This campaign, based on consumer market research conducted in both countries, will include communication initiatives, media outreach, digital materials, and a series of events designed to raise awareness and educate the public and relevant stakeholders about the nutritional quality and safety of aquaculture products.
